Prosciutto Pesto Egg “Muffins”

Serves 4

INGREDIENTS:

1 small package prosciutto
four eggs
pesto
½ cup cherry tomatoes, chopped
¼ cup basil, chopped

MAKE IT:

Carefully line the bottoms and sides of a cupcake pan with prosciutto. Preheat oven to 375 degrees. Add one egg to each hole and then a ½ teaspoon of pesto and top with cherry tomatoes and basil. Place in middle rack of oven and bake for twelve to fifteen minutes until prosciutto has separated from sides of pan. Take care to remove prosciutto wrapped egg from pan intact.
